Achari bhindi MASALA

Pickled okra

 ladyfinger or okra-1/2 kg
 onion 3-4,
karipatta-3 to 4
green chilly-1
garlic-3 to 4 flacks
redcilly powder -1/2 tsp
coriander powder-1/2 tsp
turmeric powder-1/2 tsp
crushed roasted groundnut-3tbsp
salt as per taste
oil 1tbsp
  1. wash and cut lady finger 
  2. put a pan on fire,put oil in it
  3. now add panchpuran masala in it
  4. when start crackling add karipatta and garlic chilly paste in it
  5. stir till light in colour add chopped onions in it,cook till turn golden brown
  6. add okra and mix well put all dry masala in it 
  7. cover it for 2 to 3 min
  8. now add tomatoes in it "my grand ma use to put tamarind pulp in it but i use tomatoes "
  9. tomatoes add colour in it , stir for 3-4 min then add crushed ground nut in it
  10. achari bhindi is ready to serve ,garnish with green coriander and serve with roti or perathas

Gur chana / jaggery coated roasted chickpeas

Very tasty, crunchy yet healthy snack for kids, full of protein . I often make this crunchy delight for munching.

Turnips are called Shalgam in Punjabi/Hindi, Gonglu in Punjabi and Gogji in Kashmiri. They are mild in taste and absorb spices well. We love it in various forms. Shalgam is a winter vegetable and is a popular recipe from Punjabi cuisine. Shalgam (Turnip) belongs to the radish family. Shalgam ki sabzi is very good for health as it is very low in calories and fat, and a good source of fiber and several vitamins like Vitamin C, Vitamin B, VitaminB3, Vitamin B6. Gur is Hindi/Punjabi for jaggery.  This creamy version from Punjab is one of our favourites.
This recipe is from my mother in law's cook book , my mom In law was an excellent cook and being a panjabi, her excellency was panjabi cuisine. She was excellent at cooking all panjabi dishes like sarson ka saag, makkai ki roti, gur ke chawal  or any vegetable like turnip or kormas, .
