Banana and walnut eggless cake


Bananas are all time favorites , I love this moist freshly baked cake so much that I can bake it every weekend . As you all know Bananas are a storehouse of essential nutrients like potassium, magnesium, dietary fibre and B vitamins.
It's really healthy and a tasty option to add in daily diet. And if somebody is allergic to egg then this recipe is a boon for them .


Ingredients

2 cups ...........all-purpose flour
1 tsp ................baking powder
1/2 .................tsp baking soda
1 tsp .................salt
1/2 cup ...........butter - softened / fresh cream / malai
1 cup .................sugar
3/4 cup .........whole milk
1 tsp ..................vanilla essence
2 bananas - mashed
1/2 cup .............walnuts - chopped and raisins

Method

Cream the butter with the sugar till it becomes nice and pale.
Mix flour, salt, baking soda and baking powder in another dry bowl.
Add this to the butter mixture one spoon at a time , alternating with a little milk at a time and beat until nicely blended.
Add the flour and milk alternately as you keep whipping the batter so it gets nice and fluffy. be careful about lumps .
Fresh cream or milk fat/malai makes this cake very soft and spongy so I generally prefer that .

You can even use a food-processor for this. Keep scraping the sides as you blend or beat the mixture. Add a little more milk(half cup more) if the batter looks too thick.

Add the mashed bananas and vanilla essence. Finally add in the chopped walnuts and raisins. folding in just to mix it well.

Grease a cake-baking pan, or use muffin molds for individual cakes. I used a 8" cake tin .Fill tin only 1/2 as this needs more room to rise. Even if you use a muffin moulds do not fill more then 2/3rd .

Bake your cake at 180oC till done , check your cake by a barbecue stick if it came out clean then your cake is ready to eat .
Topped it with honey and banana slices . You can topped with frosting also .

Eat the way you like it warm or cold . I like warm ,it melts in the mouth .
