Shahi Bitter gourd / muglai kerele

sweet and sour bitter guard , a very unusual sweet and tangy taste with bitterness of Bitter guard ...Try this recipe for you kid's they will start eating bitter guard !!

Shahi Bitter guard / muglai karele

WE NEED:

Karela / bitter guard ........ 4-5 mid size
Onion................ 3 big
Green chili...........2
Garlic ................7-8 cloves, crushed  
Tomatoes ..........3 big
Cumin seed.........1/2 tsp
Fennel seeds powder......1/2 tsp
Coriander powder............1/2 tsp
Red chili powder...............1/4 tsp or as per taste
Turmeric powder..............1/4 tsp
Salt ....as per taste
Tamarind paste ..............1 1/2 tsp

Sugar ................................ 1 tsp
Mustard oil ......................4 tbsp

Chop bitter gourd into medium pieces, chop onion ,green chilies and tomatoes keep aside .
Heat oil in a pan add cumin seeds stir and put garlic paste in it mix for a min and add onion , green chillies stir till light brown in color add bitter gourd in it mix well and add all the dry ingredients in it. mix , cover and cook till bitter gourd becomes tender .
Add tomatoes in it and mix well. add tamarind paste and sugar , cover and cook till done and oil separated .
Garnish with green coriander and serve hot with Indian bread

Turnips are called Shalgam in Punjabi/Hindi, Gonglu in Punjabi and Gogji in Kashmiri. They are mild in taste and absorb spices well. We love it in various forms.
