Lauki raita ( bottle gourd curd dip)
Lauki raita :
Today I made lauki ka raita , lauki or bottle gourd is a very healthy vegetable as you all know it has medicinal values and is also very rich in iron and vitamin C and B complex . For this, I grated 1 small bottle gourd with a grater and boiled it in 1 cup of water with 1/4 tsp of salt and squeezed out excess water when it became tender.
I took 2 cups of curd in a bowl and beat it nicely so that it became smooth . I mixed boiled bottle gourd in this smooth curd and added salt as required, 1/4 tsp red chilli powder , 1/4 tsp roasted cumin powder and mixed it well to prepare a nice smooth lauki raita . This I am going to serve with stuffed Indian bread ( parantha) and vegetable biryani ( vegetable rice) Ingredients for this healthy dip : 1 small bottle gourd 1/4 tsp salt 2 cup curd 1/4 tsp red chilli powder 1/4 tsp roasted cumin powder
