Roasted Brinjal Boats

Roasted brinjal boats
Long brinjals / eggplants ..........2
Onion ........................2 chopped
Tomatoes..................4 chopped
Green chili's................2 chopped
Ginger..........................2" chopped finely
Garlic ..........................4-5 cloves
Red chilli .......... 1 /2 tsp
Sesame seeds ......1/2 tsp
Salt as required
Sugar 1/2 tsp
Green coriander ....... 4 tbsp
Grated cheese .............1/2 cup

Bread pakoda / bread cheese fitter

Bread pakoda is my daughters favorite lunch box snacks as they love cheese .
crispy crunchy bread cheese fitter , awesome taste of cheese make this fitter/ bread pakoda a favorite street food ...  

Ingredients

Bread slices...... 8
Processed cheese,grated........ 1 cup
Green chilli,chopped ...... 2
Gram flour (besan) .......1 1/2 cups
Carom seeds (ajwain).......... 1/2 teaspoon
Salt to taste
Baking powder ..............1/4 teaspoon
Red chilli powder............ 1/2 teaspoon
Turmeric powder............ 1/4 teaspoon
Oil for deep-frying

Sandesh A Bangoli sweet

FOR HOME MADE COTTAGE CHEESE/ PANEER


Large heavy bottom pan
cheese cloth
2 quarts whole milk
¼ cup of lemon juice (or lime juice)

FOR SANDESH

fresh paneer from 2 quarts of milk
a handful (approx. 8-12) each of almonds and pistachios cut into slivers
a few saffron strands
1 tbsp warm milk (to soak saffron)
1/2 milk powder

1/2 cup powdered sugar (or regular, granulated sugar)
1/2 tsp cardamom powder
1 tsp Rose water

HOME MADE COTTAGE CHEESE / PANEER

Large heavy bottom pan
cheese cloth
2 quarts whole milk
¼ cup of lemon juice (or lime juice)

TO MAKE COTTAGE CHEESE/ PANEER

Heat the milk in the pan till it almost start boiling , then turn off the heat. Do Not boil the milk.
Add lemon juice (or citrus substitute) one tbsp at a time.

Green Apple And Cashew curry

These days my garden is full of  green as well as red sweet apples that is why i am posting apple dishes back to back this particular dish is very rich and awesome in taste , one must try it during Navratras as it can be consumed while fasting

we required ..
Green sour apples ....3-4 depend upon size ' cubed '
Potato.........2 cubed and fried
Cashew whole.......1/2 cup roasted
Raisins .................4-5 tbsp soaked
Dried apricot ........1-2 soaked and chopped
Hung curd .............1/2 cup
Fresh cream ..........3tbsp
Salt & pepper ....as per taste
Sugar 1/2 tsp ' optional '
Oil ........1 tbsp & for frying
Ginger .......3-4" chopped
Green chili ......2 chopped
Cumin seeds.....1 tsp
Cardamom whole....1

Rabri with stewed apples

RABRI WITH STEWED APPLE
Rabri is a Indian traditional thickened milk dessert very popularly used by north Indians , they like to serve rabri with delicious hot jalebis . But i modified it a little and made it with stewed apples This dessert is one of my favorite desserts . So rich, creamy and tasty with the goodness of apples. It always comes first in my mind whenever I look for exclusive desserts for my dinner parties . Usually stewed apples are served with apple sauce or whipped cream try this twist I am sure you will love it .


For rabri
2 kg full fat milk
8 tbsp milk powder
9-10 tbsp sugar
1 cup fresh cream - optional
A few strings of saffron
